The new Sydney Zoo at Bungarribee Super Park near Blacktown is hiring more than 150 people prior to opening later this year.
A Jobs Fair held at Rooty Hill over two days this week attracted thousands of potential zoo workers and ended up being fully booked out.
A second Jobs Fair will be held in late April and will give potential staff the opportunity to learn about the careers available at the zoo.
The most popular jobs are the prestige keeper roles, working with a wide range of animals including koalas, kangaroos, reptiles, elephants and carnivores.
Other jobs include hospitality, zoology, maintenance, life sciences, retail, group hosting, education and administration.
Sydney Zoo Managing Director Jake Burgess told media outlets the zoo was committed to creating hundreds of career opportunities in Western Sydney.
He said the Zoo had a target of 10% indigenous employees.
“We are proud of projected growth we will offer the Western Sydney economy. We anticipate these roles to be filled by a mix of local and Greater Sydney talent,” Mr Burgess said.
The project is the first major Zoo built in Sydney in more than a century and will inject up to $50m a year into the region and draw one million visitors.
